Waffles are perhaps the most underutilized culinary medium. Despite a 500-year-long history and a European haute cuisine heyday, throughout the 18th and 19th centuries, they now receive little respect.
Waffle-Recipes.com is about picking up on the traditions that died out some time ago. It’s also about bringing a modern take to those traditions. And unlike many contemporary waffle recipes and books, my aim isn’t on having a few core recipes to which mix-ins and toppings are added. The goal is to build recipes around the ingredients and flavors that make them distinct.
Above all, I want to respect waffles as a genre of professional baking. To that end, technique, metric ingredient measurements, and precise temperatures & times are of utmost concern.
